The OG pink soup.. was white? Had to try the reverse pink soup based on intrigue alone. With a lack of beet in the soup base you could pick up a lot more of the herb flavor and this one was particularly good with sorel added to the more typical green ingredients. One shouldn’t remove beet entirely though and I enjoyed the egg pickled with beet juice. The shopkeeper said her grandmother would make this every summer and beetmania didn’t start until more recently. Are grannies still making the white soup or have I been an easy target led astray?
